Gai Zai Beng 【鸡仔饼】



This Biscuit is a very famous snack from Kampar, state of Perak, Malaysia. One who visited the northern part of Malaysia always bring this as a gift for friends and relatives.

The original recipe call for lard, which is not much eaten nowadays for health reason. So this recipe use vegetable oil instead!


Ingredients:
450 gms flour
200 gms of winter melon candy (a little lesser than a cup)
100 gms of sesame (I used both black and white sesame)
100 gms Sugar
250 gms Vegetable oil
1 egg
1 tbsp Honey/maltose
1 tbsp Dark Soy Sauce
1/2 tsp Black Pepper Powder
1/2 tsp Chinese Five Spices
2 pieces of Chinese fermented tofu (Nam Yu/南乳)
1/2 tsp Salt
1 tsp Baking Powder (double Acting)
3-4 Cloves of Garlic



Roast sesame in a microwave (use a shallow plate for even spreading), microwave it for 1 minute 30 seconds, time may differ depending on your microwave oven's wattage. Let cold.

In a food processor, mince 3-4 cloves of garlic, add the winter melon candy and grind till its fine. As shown in the picture.

Now mix together all the ingredients, it will not form a solid dough, just as long as it is well blend, it is done.



Now place the mixture on a baking sheet/foil paper, slowly press the ingredients into a 2 mm thick layer,Use a rolling pin to lightly press the surface to even the dough, and cut it evenly into square pieces before baking.

Preheat oven to 285F(140 C),bake the biscuit for 30-33 minutes, let cold and break it into pieces.



Taa daaa... here we go, Kampar Chicken Biscuit!

    now I can make myself, only if we got chance to go Asian store, I don't have any winter melon candy at home!!!

  2. I rolled these out a little too thick but they seem to have a dry and powdery texture rather than a crispy one. Not sure what else I would have done wrong other than them being a bit thick.
