Sichuan (Tzechuan) Style Chilli/Minced Meat


I like ingredients that could be easily transformed into other dishes, it's good for my busy schedule.  This spicy minced meat is one of my all time favourite.

It could be easily be made into Ma Po To Pu, Spicy fried Noodle, Spicy Dry Noodle, simple and easy!


Ingredients:
600 gms of minced turkey or pork
2 tbsp Chinese cooking wine
1 tbsp Minced ginger
4-5 tbsp Sichuan Spicy Soy Bean Paste ( 郫县豆瓣酱)
1/2 tsp Sichuan Pepper powder
1 tsp Sichuan Pepper oil
1/4 cup of cooking oil



1. Add cooking wine, water and sichuan pepper oil into minced meat and let it marinate for 10 minutes. Grate ginger and keep aside.

2. Heat up a wok/cooking pan, DO NOT add any cooking oil yet, cook the minced meat and loosen the minced meat using a spatula.When the water evaporated and colour of meat changed.

3. Make a hole in the middle of minced meat and add in cooking oil, add ginger and sichuan pepper powder, cook for few minutes and add sichuan spicy soy bean paste.

4. Continue to cook until the meat become a little crisp, let cold and store in container.

Note:Add some chili powder if you liked it spicier.
