Oatmeal Bread (Toast)




This oatmeal bread was truly a challenge, I had to modify a few times before I finalized the recipe. I love the idea that it is made from oatmeal, and it is fully Vegetarian !



Ingredients:(Make 2 loaves)
3 cups Hot water/Milk/Soy milk (it has to be boiling hot, you could use anyone of these liquids)
2 cups rolled oat(I grind it into powder)
5 cups Bread Flour (use 4 1/4 cups if old dough is added)
1/4 cup wheat germ/oat bran
1/2 cup Brown Sugar
1 tsp Salt
1 Tbsp instant yeast (if using normal yeast,use 1 1/4 tbsp)
1/4 cup butter (1/2 stick)


others:
150 gms starter/old dough (from previous batch, optional)
1/4 tsp Baking powder(optional)

Here are my grinded oatmeal, you could use normal instant oatmeal without grinding, the difference is very little on the texture.

Mix together 2 cups of bread flour with yeast, and weigh out 150gms of starter/old dough, any kind of bread's dough is fine, just save some from previous batch.




In a stand mixer or bread machine, mix together oatmeal, butter and sugar. Pour in hot water/milk/soy milk, and blend into a porridge like texture in low speed.

Wait for around 20 minutes, when the temperature of mixture reduced to slightly higher than room temperature, slowly add the bread flour yeast mixture and start kneading, add another 2 cups of bread flour until a soft dough formed. Wait for 20 minutes to let the dough settle.

Now add the old dough and the remaining 1/4 cup of bread flour, knead again for about 5-8 minutes, it is alright if the dough is a little sticky at this moment.

Take out the dough and lightly dust working surface with some all purpose flour, gently knead with hand to form a soft dough.



Cover a clean, slightly damped towel over the container with the dough in it. Let it raise for an hour or till the dough doubled in size.




When the dough done raising, knead out the air, if you can smell some sourish smell, add baking powder and knead well. Otherwise, just omit it.

Divide dough into two, one slightly larger than the other. Now divide the larger dough into 3 equal parts, these are for the loaf pan.

On the smaller dough cut out 100 gm and keep it as starter/old dough for next batch.

Start shaping the dough as shown in picture. work on all three parts for the loaf pan, place all three parts evenly in the loaf pan, let it raise to about 90% full of the pan, cover with pan cover.

For the smaller loaf, shape in one long roll that fits into a pound cake pan.

Preheat oven to 375F (190 C).




Cover the pan loaf, and for the one in pound cake pan, brush a thin layer of water on the surface of dough, sprinkle some whole rolled oat as decoration.





Bake for 35-40 minutes.




Immediately remove from oven when it is done, take out the loaf and let cold on a cooling rack.





Yummy healthy bread!




Note:In case of making without starter/old dough, the measurement should be just enough for 2 loaves, thus no need to keep some of the dough for next use.
