【黑椒炒乌冬面】Stir Fried Black Pepper Udon



黑椒乌冬面是马来西亚大排档里经常可以吃到的一道面食,是喜欢炒粉的朋友可以一试的一道美食。

This stir fry Udon is one of the common noodle you could order from typical Malaysia street food stall (Dai Pai Dong), a good way to cook Udon noodle.


材料:
1 包 乌东面 (热水烫烫或者微波炉里转30秒)
1 小巴 油菜心/小白菜 (切段)
1/2 根 胡萝卜 (切片)
1/2 只 洋葱 (切块/丝)
1 小勺 蒜蓉
2-3 片 泡发的香菇 (切片)也可用新鲜的冬菇切片
2-3 只 虾 (或虾仁一把)
2-3 个 淡菜 可无
1 片鸡肉 (切片,加点料酒,盐,玉米粉和麻油腌10分钟)
1/2 杯 多一点的 鸡汤/高汤/水

调味:
1/2 小勺 现磨胡椒粉
1/2 小勺 蚝油
1/2 小勺 辣酱油 (Worcester Sauce)
1/2 小勺 酱油  



2 小勺 市售的黑椒酱

Ingredients:
1 Packet of Udon noodle (blanch in boiling water for 2-3 minutes or cut a small hole in the packaging of udon and microwave for 30 seconds)
Few leaves of Chinese mustard/Pok Choy  (cut into 2 inches)
1/2 carrot (sliced)
1/2 medium size bombay onion (slice or cut into small pieces)
1 tsp Minced garlic
2-3 dried mushroom soaked (slice)or fresh mushroom
2-3 Shrimps
2-3 Mussel  Optional
1 slice of chicken breast (slice, marinate with a little cooking wine, salt, corn starch and sesame oil)
1/2 cup chicken stock/stock/water

Seasoning:
1/2 tsp Black pepper powder (Freshly grinned preferred)
1/2 tsp  Oyster Sauce
1/2 tsp Worcester Sauce
1/2 tsp Soy Sauce

Or

2 tsp of shop bought Black pepper sauce



1.把材料都准备好后在一口铁锅里加 1-2 勺油,把蒜蓉和洋葱炒香。

2. 加入香菇和鸡肉翻炒至鸡肉变色后加入鱼丸翻炒。

3. 倒入半杯多一点的高汤煮滚,加入乌冬面炒散后加入胡萝卜,虾和淡菜。

4. 加入现磨的黑胡椒,蚝油、辣酱油和酱油调味。翻炒至水份减少,加入油菜心翻匀至青菜熟了即可上桌了。

1. Prepared all the ingredients accordingly.

2. In a cooking wok, add 1- 2 tbsp oil and stir fry the garlic and onion until fragrant.

3.  Add the chicken breast and mushroom and stir for 1-2 minutes or until chicken changes color.

4. Add fish/meat ball and add the chicken stock and bring to boil. Add the Udon noodle and cover with lid to cook for 2-3 minutes.

5. Add carrot, shrimp and mussel.  Season with black pepper, oyster sauce, soy sauce and Worcester sauce.

6. When the water is reduced to not very visible, add the Chinese mustard green. Cook until the vegetables are cooked, it is time to serve!
