Half of the last two of my Zucchini was turn into zucchini cake, and the remaining one was used to make this yummy fried noodle since it was already shredded. It is a easy and quick breakfast choice too!
1 Piece of Bihun (Rice noodle) Soaked
2 cup or more of shredded zucchini
1 cup of brean sprout (Tou geh)
1 tbsp Minced garlic
1 small sausage sliced Optional
1 tsp Dark/Sweet soy sauce
2 tbsp Light Soy sauce
A pinch of pepper powder optional
Few drops of sesame oil optional
Prepare all the ingredients accordingly.
Heat up a wok and add about 2 tbsp of oil, stir in minced garlic and when it is fragrant, add the sausage and stir for 2-3 minutes, now add the noodle and stir well, add 1/3 cup of water, dark and light soy sauce, continue to cook until the noodle become soft and cooked, when it is well cooked, add shredded zucchini and bean sprout, continue cooking until the vegetales are cooked.
Sprinkle some pepper powder and sesame oil before serving.
